Some brunch combinations are incredibly obvious — once you know what they are! Layering sweet roasted tomatoes and feta on toast with rich red onion jam, poached eggs and a burst of herbs easily steals the show without even trying.
Don’t get me wrong, there’s nothing wrong with a bit of yoghurt and fruit on toast, but there are times when only a dish as sumptuous as what you’d order in a cafe will do.
But impressive doesn’t need to be complicated, especially if you have a few of the key ingredients in your fridge already. Oven roasted tomatoes are a quick hands-off side dish that you’ll finding yourself spooning over anything you can think of (and if you can’t think of anything we have 5 handy-dandy ideas over here to get things started). Red onion jam is much the same and a quick schmear is a game changer. Chilli flakes and a scattering of fresh herbs are invaluable for even more easy flavour.
As for poached (or fried if you please) eggs and feta? If you eat them add them, one or both. If you don’t, simply leave them off or replace with something else, simple as that!
💡 This inspired combination (if we do say so ourselves) started life as chilli spiked eggs perched on a morish red onion jam spread and topped with a few cherry tomatoes, from Celsius Coffee Co in Kirribilli, Sydney. It is one of RJ’s favourite dishes due to the tomatoes and jam so we made them the hero in our version — more of the good stuff is never a bad idea.

- ½ cup roasted cherry tomatoes
- 2 Tbsp red onion jam
- 1 Tbsp feta cheese, crumbled
- sourdough or gluten free toast
- poached egg(s)
- fresh basil
- chilli flakes
- sea salt & cracked pepper

Spread toast with onion jam. Top with roasted tomatoes, crumbled feta and poached egg.

Sprinkle with basil leaves and chilli flakes. Season to taste with salt and pepper and serve.
- Oven Roasted Tomatoes and Red Onion Jam both keep well in the fridge. They're great to have on hand for a quick (and way fancier than the time it takes to throw it together) brunch.
- This combo would also be perfect in mini for apertivo. Use rounds of baguette and leave off the egg for quick pre-dinner drinks bites.
- For a dairy free option replace feta with a vegan cheese or a dollop of coconut yoghurt
- For an egg free option simply leave the egg off or replace with a neutral protein like a handful of chickpeas or silken tofu.
