Crepes with Blood Orange & Mango Compote

Compote is, in all reality, a fancy term for a syrupy fruit topping — not that there’s anything wrong with that! Our sweet and tangy Blood Orange & Mango Compote is quite happy here, perched atop Teff Crepes, but would play just as well with french toast, pancakes, porridge, or yoghurt.

Blood oranges and mangoes are nearly star-crossed lovers. The sweetness of mango marries brilliantly with the slightly bitter depth of blood oranges, yet they only cross paths in a tentative few weeks of spring… as winter citrus is on its way out and summer mangoes have begun their march in.

Using fruits that compliment each — sour and sweet, tangy and smooth, sticky and herbal — is a sure-fire way to stumble onto a successful combination for compote. We’ve added a dash of maple syrup in this recipe to help the blood orange juice thicken as it simmers, but from a flavour perspective the mango will sweeten it up just fine (so long as you don’t have a raging sweet-tooth) so feel free to adjust as necessary.

Spooning this syrupy Blood Orange & Mango Compote over crepes and topping it with a dollop of natural or coconut yoghurt makes for a very fancy looking brunch with very little effort. Making both the compote and the crepe batter the night before, then gently reheating the fruit as you cook the crepes means you’ll have brunch ready to go in no time at all.

The sweetness of early summer mango marries brilliantly with the slightly bitter depth of late winter blood oranges in the few weeks of spring where they cross paths. Make extra compote and freeze it (or preserve if that's your thing) for a year-round treat.

Serves: 4 people
INGREDIENTS
  • 1 mango, peeled and seed removed (250g mango flesh)
  • ½ cup blood orange juice (125ml)
  • 2 blood oranges
  • 1 - 2 Tbsp maple syrup
To serve
  • ½ cup natural or coconut yoghurt
  • ¼ cup chopped nuts or seeds
  • mint leaves
  • crepes (2 - 3 per person)
METHOD
  1. Slice and dice mango flesh. To segment blood oranges, use a sharp paring knife to cut off the peel and any white pith, then cut between the membranes of the segments to release the flesh. Do this over a bowl to catch any juices along with the segments. Alternatively you can simply slice the orange into rounds after the peel and pith have been cut off.
  2. In a saucepan over medium-low heat bring blood orange juice and maple syrup to a simmer. Cook 8 - 10 minutes until slightly reduced and starting to thicken. Remove pan from heat, add mango and orange segments plus any extra juice to the pan, and gently stir.

  3. To serve - fold two or three warm crepes into quarters and place on a plate. Top with a couple spoonfuls of blood orange & mango compote, some yoghurt, a sprinkling of nuts or seeds and a few mint leaves. You can also spoon the filling into the middle of a crepe and roll to enclose.

  4. Of course this topping would go perfectly with pancakes, french toast or waffles too - as well as yoghurt or porridge!

NOTES & SUBSTITUTIONS
  • Make up your crepe batter before you start the compote (or even the night before) - we suggest our quick and easy Teff Crepes - and make the crepes as the juice is simmering.
  • Start with 1 Tbsp maple syrup, add more to taste towards the end of cooking the sauce if necessary.
  • Blood oranges can be replaced with regular oranges, you may want to reduce or remove the syrup, or add a splash of grapefruit juice to balance-out the sweetness though.
